Ingredients
2 large eggplants
3 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon paprika
Salt and black pepper to taste
1 cup crumbled feta cheese
1/4 cup chopped parsley
1/4 cup chopped cilantro
1 tablespoon lemon juice
Instructions:
Preheat the oven to 200°C (392°F).
Wash the eggplants and cut them into lengthwise slices about 1 cm thick.
In a small bowl, mix olive oil, garlic, thyme, basil, paprika, salt, and pepper.
Brush the eggplant slices with the oil and herb mixture on both sides.
Place the eggplant slices on a baking sheet lined with parchment paper.
Roast the eggplant in the oven for 20-25 minutes, turning the slices halfway through until they are golden and tender.
While the eggplant is roasting, mix the feta cheese with parsley, cilantro, and lemon juice in a small bowl.
Once the eggplant is cooked, remove it from the oven and place it on a serving plate.
Sprinkle the cheese and herb mixture over the grilled eggplant slices.
Serve the dish hot as a main course or as a side dish with pita bread or salad
