Chinese rice with vegetables, often referred to as vegetable fried rice, is a versatile and popular dish in Chinese cuisine. It typically consists of cooked rice stir-fried with a variety of vegetables and seasonings. Ingredients:
2 cups cooked jasmine rice (preferably day-old)
1 cup mixed vegetables (carrots, peas, bell peppers, corn)
2 eggs, beaten
2 tablespoons soy sauce
1 tablespoon sesame oil
2 cloves garlic, minced
1 small onion, finely chopped
2 green onions, chopped
Salt and pepper to taste
Instructions:
Prepare the Rice: If using fresh rice, spread it on a baking sheet to cool and dry out a bit.
Cook the Eggs: Heat a tablespoon of oil in a large skillet or wok over medium heat. Add the beaten eggs and scramble until fully cooked. Remove from the skillet and set aside.
Sauté Vegetables: In the same skillet, add another tablespoon of oil. Add the garlic and onion, sauté until fragrant. Add the mixed vegetables and cook until tender.
Combine Ingredients: Add the cooked rice to the skillet with the vegetables. Stir well to combine. Add the scrambled eggs back into the skillet.
Season: Pour the soy sauce and sesame oil over the rice mixture. Stir to evenly coat the rice and vegetables. Season with salt and pepper to taste.
Finish and Serve: Cook for another 2-3 minutes, stirring frequently. Garnish with chopped green onions before serving.
