Cold mango pudding
 

Mango pudding is a delicious and refreshing dessert made mainly from fresh mango. It has a creamy texture and rich mango flavor, making it an ideal choice for summer. It can be prepared in different ways, mixing mango juice with ingredients such as milk or India nut milk, sugar, and cornstarch to get a thick and smooth texture. Usually served cold and garnished with fresh mango pieces or nuts.

Ingredients:
2 cups fresh mango juice
1 cup India nut milk
1/2 cup whipping cream
3 tablespoons cornstarch
1/4 cup sugar
1/4 tsp saffron
1/2 cup diced fresh mango
1/4 cup grated coconut (for garnish)
1/4 cup crushed pistachios (for garnish)

Directions:
Prepare the saffron: In a small bowl, soak the saffron in two tablespoons of hot water and set aside for 10 minutes.
Prepare the mixture: In a medium saucepan, mix the mango juice, India nut milk, whipping cream, sugar and cornstarch.
Add saffron: Add the saffron mixture to the pot and mix well.
Cooking: Place the pot over medium heat and cook the mixture, stirring constantly, until thickened and begins to boil.
Cooling: Pour the mixture into serving cups and let it cool at room temperature, then refrigerate for at least two hours.
Garnish: Before serving, garnish each cup with fresh mango cubes, grated India nuts and crushed pistachios.
