Levantine manakish |
Manakish is one of the most famous Levantine pies. It is a pie usually stuffed with thyme, olive oil, cheese, and muhammara (red sauce). It is eaten as a breakfast meal alongside hot drinks.
the components:
500 grams of flour
A cup and a half of warm water
Thyme mixed with sesame and sumac (as needed)
quarter cup of Vegetarian oil
A tablespoon of yeast
A tablespoon of sugar
A tablespoon of salt
How to prepare:
To prepare the dough:
In a bowl, put yeast, salt, and sugar.
Add oil and water, and mix the ingredients well.
We knead to obtain a cohesive and soft dough.
Cover it and let it rest at room temperature.
To prepare manakish:
Preheat the oven to 250 degrees Celsius.
Divide the dough into several small balls and spread them on a floured surface.
Spread it into a circular shape, then distribute thyme over it.
Arrange the manakish in a suitable baking tray.
Place it in the oven for 6 minutes until cooked.
After rolling out the dough and sprinkling it with thyme, we make small holes using a fork on the surface of the dough.
We brush the surface of the manqoush with olive oil.
Heat the tray in the oven for a minute or two.
Place the mankoush in the heated tray and bake it in the oven for 10-15 minutes or until it turns golden.
After it cools a little, the manoushe can be served with oil and thyme or cheese and olives.
