Eggplant salad

Eggplant salad is a delicious and healthy meal that contains grilled or fried eggplant, and it is considered one of the favorite dishes in various cuisines.

the components:
2 medium sized eggplant
1 finely chopped onion
2 cloves of crushed garlic
1/4 cup olive oil
Juice of one lemon
Salt and black pepper to taste
Pomegranate seeds for garnish
A few chopped walnuts

How to prepare:
Grill the eggplant over the fire or in the oven until it is cooked and golden.
Leave the eggplant to cool, then peel it and cut it into small pieces.
In a frying pan, heat the oil, add the onion and garlic, and stir until they soften.
Add the grilled eggplant pieces and stir them with the onions and garlic.
Add lemon juice, salt, and black pepper and stir the ingredients well.
Serve the salad on a serving plate and sprinkle a few pomegranate seeds and chopped walnuts on top.

It is best to use ripe, seedless eggplant for the best flavour.
Eggplant pieces can be fried in a pan instead of grilling them in the oven, where the oil is heated and the eggplant is fried until it turns golden.
Some spices, such as cumin or crushed red pepper, can be added to add additional flavour.
The salad can be served with pita bread or toasted pita bread.
