Falafel |
Falafel are fried fritters usually made from ground chickpeas. This food is popular in Eastern cuisine and has become one of the most popular vegetarian foods in the world. Falafel is prepared from ground chickpeas or ground fava beans, or a mixture of both, with the addition of spices and herbs such as parsley and coriander. Then they are fried in hot oil in the form of discs. Falafel is usually served with bread or wrapped in taboon bread, and garnished with salads and tahini sauce.
the components:
2 cups ground chickpeas
1 medium sized onion, chopped
3 garlic cloves, chopped
1/2 cup fresh parsley, chopped
1 teaspoon cumin
1/2 teaspoon crushed red pepper (optional)
Salt and black pepper to taste
Vegetable oil for frying
How to prepare:
In a large bowl, mix ground chickpeas, onion, garlic, parsley, cumin, and crushed red pepper (if you prefer falafel with a spicy flavor).
Add salt and black pepper according to taste, and continue kneading until a cohesive dough is formed.
Shape the dough into a small disc.
Heat the oil in a deep frying pan over medium heat.
Fry the falafel until it turns golden on both sides.
Serve the falafel hot with taboon bread and tahini sauce.
Choosing the right chickpeas: Use well-ground, dry chickpeas. It is preferable to use boiled and well-dried chickpeas before grinding them.
Additional spices: If you want to enhance the flavor of your falafel, try adding some additional spices such as ground coriander, turmeric, or oriental spices.
Fermentation: You can leave the dough to ferment for an hour before shaping it and frying it. This helps the flavor and texture develop.
Correct frying: Heat the oil well before frying the falafel. The oil should be hot enough to get the falafel crispy on the outside and soft on the inside.
Serving: Serve the falafel with soft bread and fresh salads, such as tomatoes, cucumbers and parsley. You can also serve it with tahini or yogurt sauce.
