Kofta is a type of food that is prepared by chopping meat and mixing it with spices and spices. Kofta can be made from different ground beef such as sheep, beef, or even camel1. Kofta are usually shaped into discs or fingers, and then cooked in various ways, such as grilling or baking in the oven. Onions, parsley and spices can be added to taste to improve the flavor.
Kofta ingredients:
1 kilo of minced meat
1 small onion, chopped
3 minced garlic cloves
1 small red pepper, chopped
A quarter cup of pine nuts
Half a cup of coriander or parsley
A quarter cup of almonds
Half a teaspoon of ground cumin
A quarter cup of walnuts
A quarter teaspoon of ground cinnamon
salt and pepper as needed
A quarter teaspoon of ground cardamom
A quarter teaspoon of ground cloves
How to prepare:
Mix the almonds, walnuts and pine nuts in the kibbeh until smooth.
Place the nuts in a dry frying pan over medium heat, and cook, stirring constantly, for 5 to 6 minutes until the nuts are fragrant.
Place the nuts in a deep dish and leave them aside until they cool.
Place the onion, garlic, pepper and coriander in the kibbeh and mix the ingredients until smooth.
Place a fine strainer over a medium-sized bowl, transfer the chopped vegetables to the strainer, and using a spoon, press the vegetables until you remove as much liquid as possible.
Add the drained vegetable mixture to the bowl of nuts.
Add the minced meat, cumin, cinnamon, cardamom, cloves, salt and pepper to the vegetable and nuts mixture.
Mix the kofta ingredients well with your hands for at least 5 minutes until the mixture becomes homogeneous.
Cover the bowl and place it in the refrigerator for half an hour to an hour.
Take the meat out of the refrigerator and shape the kofta mixture into fingers.
Grill the kofta over charcoal or in a large frying pan over high heat for 4 minutes on each side or until fully cooked on all sides.
Serve the kofta hot with tahini sauce and salad.
