Maqluba |
Maqluba is a popular Arabic main dish. It consists of rice with various fried vegetables, including eggplant, cauliflower, potatoes, or green beans, and a combination of these vegetables may be used. Add meat to maqluba, such as lamb or chicken.
1 cup of basmati rice
1 large eggplant, cut into slices
1 large potato, cut into cubes
1 cauliflower, chopped
1 green pepper, cut into slices
1 large onion, chopped
2 large tomatoes, chopped
500 grams minced meat (optional)
4 tablespoons of olive oil
Salt and pepper to taste
4 cups of water
How to prepare:
In a large frying pan, heat olive oil over medium heat.
Add onions and stir until translucent.
Add the ground meat if you are using it, and continue to stir until it is done.
Add eggplant, potatoes, cauliflower and green pepper, and stir well.
Add the rice and stir with the vegetables for a minute.
Add water, salt and pepper, and stir well.
Allow the mixture to boil, then lower the heat and cover the pan.
Leave the maqlouba to cook for 20-25 minutes until the rice and vegetables are cooked.
Serve hot maqlouba with milk or yoghurt and Arabic salad.
