Muskhan

Musakhan is a traditional Palestinian dish consisting of grilled chicken cooked with onions, sumac, capsicum and saffron, served on taboon bread1. Musakhan is one of the fatty winter dishes, as it provides the body with energy and contains a high percentage of calories and vitamins. It is attended at events and celebrations and served to guests.

Ingredients:
1 grilled chicken (cut into pieces)
2 medium onions (chopped)
3 cloves garlic (crushed )
1 tbsp saffron
1 teaspoon mixed spices
1 tsp kabsa spices
1 tsp barbecue spices
1 tsp salt
1/2 tsp black pepper
1/2 cup olive oil
1/2 cup lemon juice
1/2 cup water
1/2 cup sumac (optional)
Taboun bread for serving 

Cooking:
In a large skillet, heat the oil over medium heat.
Add the onion and stir until transparent.
Add the garlic and stir for a minute or until it smells distinctive.
Add the chicken pieces and stir until browned on all sides.
Add saffron and mixed spices and stir well.
Add lemon juice, water and bring to a boil.
Cover the pan and let the chicken cook over low heat for 30-40 minutes or until the chicken is smooth and fully cooked.
Add sumac if you prefer it and stir well.

Grilled chicken:
Grill the chicken pieces on charcoal or in the oven until golden and acquire a distinctive flavor.
Chicken is best cut into medium-sized pieces.
Spices:
Use saffron to give the dish a special color and flavor.
You can use a combination of mixed spices, such as cumin, cinnamon and cardamom, to enhance the flavor.
Onions and garlic:
Stir the onion and garlic in oil until transparent and cooked.
You can add onions and garlic with chicken pieces or after grilling.
