Pistachio cake, also known as "pistachio cake", is a type of cake characterized by a rich and distinctive pistachio flavor.  Ingredients:
For the cake:
2 cups flour
1 cup ground pistachios
1 cup sugar
1 cup yogurt
1/2 cup vegetable oil
4 eggs
1 teaspoon baking powder
1/2 tsp bicarbonate of soda
1/4 tsp salt
1/4 teaspoon saffron, dissolved in two tablespoons of hot water
1 tsp vanilla
1/2 cup rose water
For garnish:
1/2 cup crushed pistachios
1/4 cup dried rose petals (optional)
1/2 cup whipped cream
2 tbsp honey

Directions:
Prepare the oven: Preheat the oven to 180 ° C. Grease the cake pan with butter and sprinkle with flour.
Mix dry ingredients: In a large bowl, mix flour, ground pistachios, baking powder, bicarbonate of soda, and salt.
Mix the liquid ingredients: In another bowl, beat the eggs and sugar until the mixture is light and crisp. Add oil, yogurt, vanilla, rose water and melted saffron and beat well.
Combine ingredients: Gradually add the dry ingredients to the liquid ingredients and mix until combined.

Baking: Pour the mixture into the cake pan and bake for 35-40 minutes or until toothpick comes out clean from the middle.
Cooling: Allow the cake to cool completely before garnishing.
Garnish: Garnish with whipped cream, crushed pistachios, dried rose petals, and sprinkle honey on top.
Tips:
You can add a pinch of rose water to the whipped cream to add a distinctive flavor.
If you prefer a stronger saffron flavor, you can increase the amount slightly.
